Weigh beans
0:05
Name
Seconds
Description
Weigh out the beans — fresh, not pre-ground.
Why it matters
Weighing instead of scooping is the only way to repeat a brew — beans differ in density and roast, so a scoop of one is not a scoop of another. Fix the dose and every other variable finally means something.

Grind

Name
Seconds
Description
Grind coarse.
Why it matters
Four minutes of immersion behind a metal mesh means anything small enough to slip through ends up in your cup. Keep it coarse — rough sea salt — because fines are what make a press taste bitter and silty at once.

Add water

Name
Seconds
Description
Add water, stir, and start the timer.
Why it matters
Immersion brewing extracts by contact rather than pressure, so every ground needs to be wet at the same moment. Pour with enough energy to sink the floaters — dry pockets simply never brew.

Steep

Name
Seconds
Description
Steep 4 minutes.
Why it matters
Four minutes is the classic, and it's the variable doing all the work here. Start the timer as the water goes in, and remember the clock only stops when you decant — coffee left on the grounds keeps extracting.

Break crust
0:10
Name
Seconds
Description
Break the crust and skim the foam.
Why it matters
Carbon dioxide floats a crust of grounds on top that never fully extracts and traps aroma underneath. Breaking it drops those grounds through the brew; skimming the foam takes the bitterest fines with it.

Press
0:30
Name
Seconds
Description
Press slowly and serve.
Why it matters
The plunger separates grounds from liquid — it isn't squeezing out more coffee. Push slowly and evenly; forcing it drives fines through the mesh and stirs up bitterness right at the end.

Name
Seconds
Description
Pour it out and enjoy.
Why it matters
Coffee keeps changing as it cools: aromatics fade, acidity sharpens and sweetness comes forward. Drink it soon after brewing, and taste it as it drops in temperature — that's how you learn what to adjust next time.
