Why it matters

Why it matters
This is the finest grind in coffee — flour, not sand. The grounds are never filtered out, so they have to extract almost instantly and then settle in the cup; most burr grinders can't go this fine, which is why dedicated Turkish mills exist.

Why it matters
Everything goes in cold and together — coffee, water and any sugar — before the cezve ever meets the flame. Sugar has to be added now: it helps build the foam, and you can't stir it in later without knocking that foam down.

Why it matters
Slow, gentle heat is what builds the foam that defines the cup — rush it and it never forms. The brew is never filtered, so pull it off the flame as the foam climbs; letting it boil turns everything harsh.

Why it matters
Coffee keeps changing as it cools: aromatics fade, acidity sharpens and sweetness comes forward. Drink it soon after brewing, and taste it as it drops in temperature — that's how you learn what to adjust next time.
