Macchiato to latte: one shot, and how much milk

- Every drink here starts from an identical double shot; what changes is how much milk goes on top, and the range from the smallest to the largest is more than fivefold. Two of them sit within a few grams of each other, which is where volume stops explaining anything and texture takes over.
Order a macchiato and a latte in the same café and the coffee in them is identical: the same 18 g of grounds, pulled to the same 36 g of espresso. Everything that separates the drinks on the menu happens after that, and most of it is a question of how much milk.
Across the milk drinks here the answer runs from 40 g on a macchiato to 220 g on a latte — 5.5 times as much. That is the whole ladder, and it explains more of the menu than any amount of prose about mouthfeel.

Strength is the ratio, not the size
A drink with less milk tastes stronger for the obvious reason: the same coffee is being diluted less. What surprises people is how quickly it falls away. Doubling the milk halves the coffee's share of the cup, so the difference between the bottom of the ladder and the top is not a matter of degree — the small ones taste like coffee with milk in it and the large ones taste like milk with coffee in it, and both are the point.
It also means the way to make a large milky drink taste stronger is not a longer shot. A longer shot pulls more water through the same grounds and gets you more of the bitter end of the extraction; what you want is a second shot, or less milk.
Where volume stops explaining it
Look at the two closest rungs: cappuccino at 150 g and flat white at 160 g. 10 g apart — about a mouthful. If volume were the whole story these would be the same drink with two names, and plenty of cafés treat them that way.
They are not the same drink, and the difference is foam. Milk steamed for one is stretched more: more air, a thicker cap, a lighter body. The other is barely stretched at all and rolled until it is glossy, so it pours as liquid rather than sitting on top. Same volume, different proportion of that volume made of bubbles — which changes how much liquid milk actually reaches the coffee, and therefore how strong it tastes.
That is why the two get argued about endlessly and why the argument never resolves. The distinction is a texture the numbers cannot hold, and it varies by café more than the volumes do.
Temperature, and the mistake almost everyone makes
The ladder is steamed to between 58 and 62 °C, which is cooler than most people expect and cooler than most home machines deliver. Milk is sweetest around there: the lactose reads as sweetness and the proteins are still holding the foam together.
Push past roughly 70 °C and both of those go. The proteins denature, the foam collapses into something stiff and dry, and the sweetness turns into the scalded flavour that makes bad milky coffee taste of hot milk rather than coffee. Overheated milk cannot be rescued, and it cannot be re-steamed.
The drinks meant to be drunk immediately sit at the cooler end; the ones with more foam run a little hotter, because a thicker cap insulates and the drink is expected to last longer. If your milk is too hot to sip straight away, it was too hot to pour.
What the ladder does not settle
Cup size, mostly. These are the volumes we publish for each drink, and a café working to a different cup will pour to fill it — a flat white in a 6 oz cup and a flat white in an 8 oz cup are both flat whites to whoever served them. The ladder describes the intent behind each drink rather than a standard anyone enforces.
Nor does it settle the regional arguments, and there are several. The same name means measurably different things in different countries, and the drinks that travelled furthest from where they were invented have drifted the most. Treat the numbers as one good version of each drink, start there, and adjust to the cup in front of you.
