Espresso vs Cold Brew: 93 degrees and 25 seconds against 20 degrees and a day

Espresso and cold brew are the two ends of coffee. Every variable that matters is set to opposite extremes, and the drinks that come out have almost nothing in common except the bean. Setting them side by side is the quickest way to understand what each variable actually does.

Temperature is doing most of the work
Espresso brews at 93 °C, cold brew at about 20 °C. That gap is not a detail; it changes which compounds come out of the bean at all.
Extraction is a solubility problem, and solubility is temperature-dependent — but not uniformly. The acids that give a light roast its brightness, and many of the aromatic compounds that make coffee smell like coffee, dissolve readily in hot water. A great deal of what is bitter dissolves readily too, which is why an over-extracted hot brew turns harsh. In cold water, both groups come out far more slowly, and the acids and bitter compounds are suppressed more than the sugars and the heavier, chocolatey compounds are.
That is the whole reason cold brew tastes smooth and low-acid. It is not that the coffee is different or that something has been removed. It is that cold water never took much of the sharp material out in the first place. Serve the same beans as espresso and the acidity is right there.
Time is compensating for it
Espresso finishes in about twenty-five seconds. Cold brew takes twelve to twenty-four hours. Those two numbers are not independent of the temperatures above them — they are what makes the temperatures workable.
Slow extraction needs either heat or time, and cold brew has no heat, so it spends time instead. Espresso has almost no time, so it compensates with heat, with pressure, and with the third variable in the table.
Which is why the grinds are 7 times apart
Espresso wants 200–300 µm. Cold brew wants 1000–1400 µm. The coarsest cold brew particle is roughly 7 times the width of the finest espresso one, and that is the single widest gap between any two methods this site charts.
Grinding finer does two things: it exposes more surface area, and it packs the bed tighter so water moves through more slowly. Espresso needs both. Twenty-five seconds is not long enough to extract from coarse particles, and without a tight bed there would be nothing for the pump to push against — the water would simply run through.
Cold brew needs the opposite, and for a reason people often get backwards. The coarse grind is not there to slow extraction down; twenty hours is plenty of time regardless. It is there to keep the brew clean. Fine particles in a long steep produce a sludgy, over-extracted cup and are miserable to filter out. Coarse grounds hold together, release slowly and strain cleanly.
The ratios are not comparable, and that trips people up
Espresso's 1:2 and cold brew's 1:10 look like they are measuring the same thing. They are not.
Espresso's ratio is dose to yield — 18 g of coffee going in and roughly 36 g of liquid coming out of the basket. Cold brew's is dose to water added: 100 g of coffee to about 1000 g of water, most of which you get back, minus what the grounds keep.
That matters because cold brew at 1:10 is usually a concentrate, meant to be cut with water or milk before drinking. Comparing its ratio to a drink you consume as-is will tell you cold brew is weak, when the opposite is true.
If you only take one thing
Every difference in the table follows from one decision: whether to use heat or time. Choose heat and you need a fine grind, pressure, and a stopwatch, and you get a bright, intense drink with a short shelf life. Choose time and you need a coarse grind, a jug and patience, and you get a smooth, low-acid concentrate that keeps for a week.
Everything else — the grind, the ratio, the vessel — is downstream of that one choice rather than a separate decision you have to make.
