Notes

We never let it boil and we never stir it after the saffron — the settling is the only filtration this method has. Pour about a third of a cup, and keep pouring: an empty finjan is a question, and shaking it is the answer.

Behind every step

    Weighing instead of scooping is the only way to repeat a brew — beans differ in density and roast, so a scoop of one is not a scoop of another. Fix the dose and every other variable finally means something.

    Qahwa is poured off settled grounds rather than filtered, so the grind has two jobs that pull against each other: fine enough to give everything up in five minutes of low heat, coarse enough to fall out of suspension while it rests. Turkish-fine never settles, and every cup comes out muddy.

  3. 3Spice the water

    The cardamom goes in first and gets the water to itself, which is the part most recipes outside the Gulf skip. Green pods, cracked open rather than ground — they need those five minutes to give anything up, and coffee added now would simply cook the whole time they were doing it.

    A stir, not a whisk. The coffee should be wet through and then left alone; qahwa is a light roast in a lot of water, and agitation past the first stir only lifts grounds that will have to settle again later.

    Low enough that the surface only trembles. A rolling boil sends the cardamom's aromatics up into the kitchen and leaves a light roast tasting of paper — this is the step where most qahwa is lost.

  6. 6Add the saffron

    Saffron goes in at the end, and only a pinch — a few threads colour and perfume the whole pot, and more makes it medicinal rather than fragrant. Off the heat immediately after: what it gives up, it gives up in the resting.

    This is not an extra steep, it is the filtration. Nothing strains qahwa but gravity and a patient hand, so the grounds have to be on the bottom before a drop is poured. Do not stir it again, and do not tip the pot to look.

    Pour in one steady movement from a little height, and stop before the last of it: the bottom of the dallah is where the grounds are. Traditionally the cup is filled about a third — a small cup, poured often, is the whole hospitality of it.

    Coffee keeps changing as it cools: aromatics fade, acidity sharpens and sweetness comes forward. Drink it soon after brewing, and taste it as it drops in temperature — that's how you learn what to adjust next time.

Fix it by taste

Roast first, then cardamom, then the clock. A light roast is not a preference here, it is the drink. Weak? More coffee, not more time — extra minutes on the heat cook it rather than strengthen it. Not fragrant enough? More pods, and crack them rather than grinding. Cloudy? Coarser, and let it stand longer before you pour.

What you need

A dallah if you have one and a small saucepan if you do not, plus a fine sieve and small handleless finjan cups. The pot's shape is not decoration — the pinched neck holds the grounds back while the long beak pours off the clear top.

Beans & roast

Very light roasts, lighter than anything else on this site — pale, almost green-gold. Arabica, and traditionally Yemeni or Ethiopian. A medium or dark roast will make a drink, but it will not make qahwa: the spice has nothing to sit against and the whole thing turns bitter.

Dallah FAQ

Why is my qahwa cloudy?

Either the grind is too fine to settle, or you poured before it had. Qahwa has no filter at all — the grounds drop out of suspension and you pour off the clear top. Coarsen a step, and give it two or three minutes standing still before the first cup.

How much cardamom?

Around eight cracked green pods to 500 ml is a middle setting, and Gulf households often go far heavier — cardamom is not a garnish here, it is half the drink. Crack the pods rather than grinding them: ground cardamom clouds the pot and never strains out.

Can I use a dark roast?

You can brew with it, but it will not taste like qahwa. The traditional roast is very light — pale gold — which is what leaves room for the cardamom and saffron. A dark roast simply dominates them and turns bitter over five minutes of heat.
