The phin brews at 1:6, and everything follows from that

- A phin is a pour-over by mechanism and a concentrate by intention. Its ratio sits far below every other filter method on this site, and once you read it as a concentrate rather than a weak espresso, the coarse grind, the slow drip and the sweetened milk all stop looking like quirks.
A phin is a small metal filter that sits on the cup and drips. By mechanism it is a pour-over. By intention it is nothing of the sort, and the number that gives it away is the ratio: about 1:6, against an average of roughly 1:13 across the other filter methods here — 2.1 times as much water per gram of coffee.
20 g of coffee and about 120 g of water does not make a mug of filter coffee. It makes roughly a small glassful of something much darker, and every other odd thing about the method follows from that decision.

The phin sits at the bottom of that column and near the top of the grind one, which is the combination the rest of this piece is about. Nothing else here brews that strong that coarse, because nothing else here is making an ingredient.
It is a concentrate, and it is supposed to be
The mistake English-language writing makes about the phin is to treat the result as a cup of coffee that came out too strong. It is not a finished drink. What comes through the filter is a base, and the recipe assumes something else is going into the glass with it: ice, sweetened condensed milk, soda water, or all three.
Read that way the arithmetic stops being strange. A glass of cà phê sữa đá is a small volume of very strong coffee plus milk plus a lot of melting ice, and the finished drink lands somewhere near the strength of an ordinary iced coffee. The concentrate is the ingredient, not the product.
It also explains why phin coffee tastes weak and disappointing when a café brews it at filter strength to be polite to foreign palates. Dilute the base and then add milk and ice on top of it and there is nothing left to carry the drink.
Which is why the grind is coarse
The counterintuitive part. A strong brew ought to want a fine grind, and the phin's published window is 800–1000 µm — coarser than most pour-overs on this site, closer to what a french press wants.
The reason is that the phin controls strength with water volume rather than with extraction. It is already going to sit dripping for four or five minutes, which is a long time for hot water to be in contact with grounds; grind fine on top of that and the brew goes past strong into astringent and hollow. Coarse grounds keep the drip slow without over-extracting, and the chamber's press disc does the rest of the work of holding the bed together.
There is a mechanical reason too. The filter is a perforated metal plate, not paper, and fine grounds pass straight through it into the glass. Coarse is partly a choice about flavour and partly about not drinking the bed.
Robusta is a feature here
Vietnamese phin coffee is usually robusta, or a blend heavy with it, and outside Vietnam that is often reported as a compromise about cost. It is a compromise about cost. It is also the right bean for the drink.
Robusta carries roughly twice the caffeine, less acidity and a heavier, more bitter body than arabica — qualities that are a liability in a delicate filter cup and an asset when the coffee has to survive being buried under condensed milk and ice. A washed Ethiopian arabica in a phin makes a technically interesting drink whose entire character disappears the moment the milk goes in.
What the numbers leave out
The drip rate, which is the part that actually takes practice. How hard the press disc is screwed down decides whether the brew takes three minutes or ten, and no published figure can set that for you — it depends on your grind, your phin and how much coffee is in the chamber. The window we publish assumes the drip finishes in something like four to five minutes; if yours is much faster, tighten it.
And the sweetness. Condensed milk is not a garnish here, it is a structural part of the drink, and the amount is a matter of taste that varies household by household across the country the drink comes from. The ratio above describes the coffee. What happens to it in the glass is somebody's grandmother's business, not a specification.
