0:15Water first is the whole recipe. Let it sit a moment off the boil, around 80 °C: water straight from a rolling kettle scalds the crema the moment the shot lands on it.

0:10Pull it into the cup you have already filled, or pour it in gently — either way the crema floats on the water instead of being poured through. That is the layer the drink is built to keep.
