About the region

Sul de Minas is the largest Arabica area in the largest coffee country, and a great deal of what the world drinks as generic 'Brazil' comes from here. The land is rolling rather than flat, which limits full mechanisation and keeps holdings smaller than in the Cerrado.

Most of it is pulped natural or natural — Brazil's dry season arrives reliably enough that drying cherry on the patio is the default rather than a risk.

In the cup

The Brazilian blend backbone: milk chocolate, peanut and caramel over a low, soft acidity with a heavy body. Sweet and round rather than bright, and the reason Brazil dominates espresso bases.

Terrain

Rolling hills in southern Minas Gerais at moderate altitude, with a dependable dry season for patio drying.
