About the region

Toraja is in the highlands of central Sulawesi, geographically and culturally distinct from Sumatra and producing a noticeably different coffee. Some of it is wet-hulled in the Sumatran manner and some fully washed, and the washed lots taste like a different origin altogether.

The region is remote, the farms are small, and volumes are far lower than Sumatra's — Toraja is a specialty product rather than a commodity one.

In the cup

Cleaner and more acidic than Sumatra: ripe fruit and warm spice over a full body, with dark chocolate and a drier finish. The washed lots are bright enough to surprise anyone expecting the Indonesian stereotype.

High, rugged limestone and volcanic highland in central Sulawesi.
