This grinder was in the catalogue long before anyone opened its manual. Every number on the page was modelled off an uncited slope; the maker's own starting settings had simply never been read.
They are macro settings on the 1-31 scale the same manual describes — "The Sette has 31 macro adjustment steps" — so they are already in this page's units: espresso 3-9, AeroPress 10-15, V60 13-18, drip 15-25, Chemex 20-31.
It also settles what happens past Chemex. Baratza charts Chemex out to 31, the end of the dial, and nothing coarser, so this page no longer claims a cold-brew setting the machine has no room for.
The manual names only the Sette 270 — thirteen times, and never the 270 W or the 270 Wi — so those two models are left out of it rather than assumed to share a table.
